**Person in charge checked todays rice pH level and it was accurate. They did not need to throw out the rice due to it being accurate.
34 Temperature measuring devices for ensuring proper temperatures of food are not available or readily accessible in under-the-counter refrigeration/freezer units and reach-in freezer unit.
45 Slow draining handwashing sink in food prep area
47 The following were observed:
-Food debris on shelving units/prep table in food prep area
-Food debris on lower interior surfaces of reach-in refrigeration unit and under-the-counter refrigeration units/freezer
-Food debris around perimeters of floor of walk-in freezer
53 Light food debris observed around perimeters of floor in food prep area.
53 Broom and dust pan observed on the floor and not elevated.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
**Person in charge arrived during the inspection with a ServSafe Certification and not a City of Philadelphia Certification. An application for the City certification was given via e-mail.
6 Food employees observed donning single use gloves without a prior hand wash.
**food employee went to wash his hands before putting new single-use gloves on.
21 Shrimp and cucumbers potentially hazardous ready to eat food, prepared in the food facility and held for more than 48 hours, located in the under-counter refrigeration unit., was not date marked.
**Person in charge added the dates.
