13 Several raw animal foods were stored above ready to eat foods in the refrigerator and walk-in cooler. Eggs were stored above raw vegetables in the walk-in cooler. PIC began rearranging foods.
20 Potentially hazardous food (shrimp, chicken, pork) was held in the cold prep unit at 43-47 degrees F rather than 41 degrees F or below as required. PIC adjusted the unit temperature.
21 Potentially hazardous ready to eat food, prepared in the food facility, located in the refrigerator, was not date marked. Dates were provided.
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (eggrolls) without written procedures or documentation to verify disposition of food. Egg rolls were placed in the refrigerator.
26 Working containers in restroom area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical.
