1 Certified person did not have a Philadelphia certificate. Application given to the person in charge.
No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
8 Observations:
- Hot water at the handwash sink in the front area was 144F. Cold water was not available for mixing.
- A leak was observed under the handwash sink in the warewashing area. A bucket was placed under the sink.
8 Soap and paper towels were not available at the handwash sink in the warewashing area and rotisserie area. Missing items were provided.
13 Facility was using the 2-compartment square cornered sink as a prep sink which is not approved. The approved prep sink was changed to a directly plumbed sink.
13 Sneeze guards were not observed on the cold and hot buffet bars and front carving station in the dining room.
13 Several raw animal foods (shell eggs, beef) were stored above ready to eat foods in the walk-in cooler. Foods were rearranged.
14 Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use. The correct wash, rinse, sanitize procedure was explained.
19 Potentially hazardous food (chicken, pork) was held in a defective hot-holding cabinet at the rotisserie at 85 degrees F rather than 135 degrees F or above as required. Food was discarded.
26 Working containers in prep area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical.
26 Observed insecticides and rodenticides not labeled by the manufacturer for food facility usage, in the rear area.
36 Small flies observed in the rotisserie area, men's restroom, and warewashing area.
41 Food dispensing utensil in the ice observed in direct contact with food and not having handle stored above the top of the food.
45 The following observations were made:
- Defective equipment: hot-hold cabinet; beverage refrigerator in front
- Domestic freezer in the rear food prep area and front area.
- Food prep sink is not properly sealed to the wall.
- Non-NSF approved equipment: galvanized hood (variance expired 10/2021); orange juicer, hot buffet bar. Variance application given to the person in charge
45 Foil observed lining surfaces in the prep area.
46 Food facility lacks sanitizer test strips to monitor sanitizer concentration.
46 Only two stoppers observed at the warewashing sink.
48 Cold water was not available at the handwash sink in the front area due to the cold faucet handle being stripped.
53 Roach carcasses observed throughout the prep area. Person in charge began cleaning.
54 One light under the exhaust hood was not shielded from breakage.
