1 The PIC did not have adequate knowledge of wash, rinse, and sanitizing requirements.
*The Sanitarian reviewed proper sanitizing protocol.
8 Old food residue and debris observed in the handwash sink.

*The PIC brought soap to the area.

-Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
20 The cold prep unit, top and bottom, observed at 62 F, instead of at least 41 F or below. The Sanitarian advised the PIC to discard the items (Eggs, mayo, cheese, lettuce) stored in the unit, corrective action not taken.
31 The cold prep unit does not have the capacity to maintain all refrigerated foods at a temperature of 41 degrees F or below.
