14 The second compartment observed with food debris inside. PIC took corrective action and washed, rinsed, and sanitized the 3 bay sink before the sanitization process.

14 - Soiled utensils present in all bays of the warewash (3-compartment) sink in prep area; not clean to sight and not properly setup for sanitization of utensils and food equipment. Corrective action : A food employee cleaned and removed the utensils and warewash sink bays, properly setup the 3-compartment sink for sanitization of utensils and food equipment prior to completion of inspection.
21 - Opened commercially processed ready to eat food (lunch meat and cheese), located in the walk-in cooler and closed display case, and held more than 48 hours, were not marked with the dates were opened. *Sanitarian instructed the person in charge to provide dates for the cheese and lunch meat.
