6 Hot water in the prep area was observed at 73 degrees F.
Hot water heater was turned up during the inspection to attain a higher temperature during the inspection.
8 The handwash sink in the prep and warewash area was blocked by trash can and food bowl with fish and not accesible at all times for employee use.
Food items and trash can were removed during the inspection to allow for accessibility to hand wash sinks.
14 The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 10 ppm, rather than 50-100 ppm as required.
Chlorine concentration added to solution to derive 50 ppm.
21 seafood salad, macaroni salad and cheesecake potentially hazardous ready to eat food, prepared in the food facility and held for more than 48 hours, located in the closed display case refrigerator, was not date marked.
Person in charge states that all food items do not last more than 2 days before discarded but regardless put dates on them during the inspection.
39 Moist wiping cloths observed lying on chest freezers, food prep tables and not stored in sanitizing solution.
