1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. * The person in charge with a FSC showed up 10 min after inspection started.
36 Door observed tied open upon entry and during inspection. * Employee closed door.
39 Moist wiping cloths observed lying on * and not stored in sanitizing solution. * Employee removed cloth placing it in a bucket of sanitizing solution.
41 Serving tongs observed stored in stagnant water with food debris. * Tongs were removed and water dumped.

1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.(Food Borne illnesses) * The inspector reviewed food borne illnesses with the person in charge.
8 The hand wash sink in the food prep area was blocked by meat slicer and not accessible at all times for employee use. * The person in charged relocated meat slicer.

11 8 Severely dented, swollen, distressed canned items observed in retail area. * Dented cans were removed.
11 12 expired cartons of eggs observed in reach-in refrigerator in retail area. * Eggs were removed.
