**No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
**An application for the City Certificate was issued during the time inspection.
8 Hot water does not reach peak demand at all handwashing sinks throughout the facility (food prep, bar, women's and men's employee restroom areas). Hot water observed at a temperature of 85-95 degrees F.
**PIC took corrective action and increased hot water heater during time of inspection. Hot water observed between 100-110 degrees F at all handwashing sinks throughout facility.
13 Uncovered food items observed in some under-the-counter refrigeration units/walk-in cooler located in the food prep area.
14 The chlorine concentration in the sanitizing solution of the mechanical ware-washing sink was 0 ppm, rather than 50-100 ppm as required.
**PIC was instructed discontinue use of mechanical ware-washing machine and to utilize the 3 bay ware-washing machine until serviced by maintenance.
21 Potentially hazardous ready to eat food, prepared in the food facility and held for more than 48 hours, located in the under-the-counter refrigeration unit, was not date marked.
