8 Food residue observed in the handwashing sink in the kitchen area. Corrective action; PIC removed the food debris and cleaned the handwashing sink during the inspection.

13 - Observed raw pork in the lower compartment of the cold-holding prep unit stored above and next to RTE food items. Corrective action; PIC removed the pork from the cold-holding prep unit to be stored properly in the walk-in cooler during the inspection. - Observed uncovered food items (plantains) on the floor in the walk-in cooler. Corrective action; PIC placed a covering on the plantains during the inspection.
21 - Multiple potentially hazardous ready to eat food items prepared in the food facility located in the walk-in cooler were not date marked. Corrective action; PIC placed dates on the food items during the inspection.

6 - Observed employees not washing hands and switching gloves in between working with raw food and ready-to-eat food. Sanitarian explained to PIC the importance of handwashing in between tasks and before switching gloves during the inspection.
13 -Observed raw animal products (chicken and beef) stored next to RTE foods in the walk-in cooler and reach in refrigerators. - Observed raw beef stored above raw fish and shrimp in the reach-in refrigerator. - Observed uncovered food items (plantains) on the floor in the walk-in cooler. - Observed multiple uncovered raw and ready to eat food items in the walk-in cooler, prep tables, and reach-in refrigerators. - Observed non-food grade plastic bags being used to store raw animal products in the walk-in cooler and freezers. - Observed a plastic bag mail parcel stored on onions and vegetables in the walk-in cooler.

33 Raw beef and chicken observed being thawed using an unapproved method. Food observed thawing at room temperature on the on the prep counter. Sanitarian had the food employee move the food items to thaw in the refrigerator during the inspection.

Containers were stacked with unsanitary containers placed directly on uncovered food. Open 5 gallon container of plantains on floor under near prep table where raw chicken is battered. Uncovered food, inluding cheese are present in the walk-in unit under unclean condenser.
14 Steel lids on drying rack were not clean on rim. Cylindrical steel food containers were not clean near rim, with old residue.
