-The interior of all refrigeration units was observed with debris/residue.
-Employee observed wiping water into a container at the bottom of refrigeration unit located in kitchen due to condensation leak inside .A good amount of water was still present after wiping.
-Stagnant water observed on the floors in the walk-in cooler.
-Mechanical hood filters were observed with heavy grease accumulation.
-The smaller mechanical hoods filters were observed charred with black residue buildup.

13 Several unwrapped/unprotected food items observed stored improperly in the top of a prep refrigeration unit. Some unwrapped, loosely wrapped, and in direct contact with other items.
Corrective Action: These items were discarded. some of the items include bacon, broccoli and cheese.
14 Black residue observed on the interior of the ice machine bin located in basement; On rim above the Ice.
20 Marinara sauce , minced garlic in oil, coleslaw and macaroni salad located in prep area refrigerators were measured between 48-47 degrees F rather than 41 degrees F. Employee removed these items out of the refrigerator to be discarded.
