-Observed two hand dryers were not operational. Corrective action was taken paper towels were provided.
-Hot water observed in 1 of 8 restrooms was observed at 70 degree F and not 100 degree F as required. Corrective action was taken and hot water was restored.
- No sign or poster posted at the handwash sink in the 4 restrooms to remind food employees to wash their hands.
14 Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 10 ppm, and not 50-100 ppm as required. Corrective action was taken and a fresh bottle of sanitizer was provided.
14 Black residue, pink slime observed on the interior of the ice machine bin around baffle plate. Corrective action was burned and surfaces washed, rinsed and sanitized.
20 Cut lettuce was held at 61 degrees F rather than 41 degrees F or below as required. See discard list.

13 Cocktail fruit was not covered to prevent contamination. Corrective action was taken and fruit was covered.
14 -Dust observed on food equipment hanging on pot hanger. Corrective action was taken and equipment was removed, washed and sanitized.
-Black residue observed on the interior of the ice machine bin around baffle plate. Corrective action was taken and ice was burned, and surfaces were washed, rinsed and sanitized.
14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 100 ppm, rather than 200 ppm as stated on the manufacturer's use directions. Person in Charge took corrective action and added more sanitizer.
20 -Cut tomatoes and chili was held at 48 degrees F rather than 41 degrees F or below as required. Person in Charge took corrective action and turned cold preparation unit down to bring food temperatures down.
-Cocktail juices and bloody mary mix was held at 54 degrees F rather than 41 degrees F or below as required. See discard list.
