1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. Food safety certified person came in the middle of the inspection in the person of Shamaya Oberlton.
39 Moist wiping cloths observed lying on prep table and not stored in sanitizing solution.
43 Single-use disposables dishes (take away bowls) observed not inverted or covered before use to prevent contamination.
45 Domestic microwave observed in prep area.
46 Food facility lacks sanitizer test strips to monitor sanitizer concentration. QAC test strips needed to test the accuracy of sanitizer solution.
47 Ice accumulation observed inside the chest freezer in the prep area.
53 Cleaning needed on floor corners and perimeters to remove debris observed underneath warewash sink and cooking equipments in the prep area.

14 -The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 100 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions. *A new batch of sanitizer was prepared at the required ppms.
