13 A cutting board was observed in the food preparation sink. Note: The person in charge was instructed to clean equipment in the warewash sink.
20 Time and temperature-controlled sensitive (TCS) food in the large cold preparation unit were observed at 53 degrees F. Note: The person in charge was instructed to discard the TCS foods inside.

1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code in relation to the proper wash, rinse, sanitize procedure. The correct procedure was explained.
1 Certified person was not present at the start of inspection. They later arrived. No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
6 Hot water was observed at 88F at the handwash sinks throughout the facility. Hot water heater was adjusted and the temperature was later observed within range.
13 Water was not available at the food prep sink.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours. Slicer was taken apart and properly cleaned.
21 Opened commercially processed ready to eat food and ready to eat foods prepared in the facility, located in the walk-in cooler, and held more than 48 hours, was not marked with the date it was opened and/or prepared.

36 Baby roach was observed crawling in the rear prep area. Flies observed in the prep area.
36 The front door was observed open and unscreened which does not protect against the entry of insects, rodents, and other animals.
37 Food boxes in the walk-in cooler were not stored at least 6 inches above the floor. Splashguard needed between the handwash sink and a wood pallet with bags of flour/sugar.
41 Food dispensing utensil in the flour observed in direct contact with food and not having handle stored above the top of the food.

46 Hot water was observed at 102F at the warewashing sink instead of a minimum of 110F.
