1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. Application emailed.
14 The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 200 ppm, rather than 50-100 ppm as required. Dispenser was not designed for chlorine sanitizer. Corrective action was taken and quaternary ammonium sanitizer was provided.
14 Black residue observed on the interior of the ice machine bin around sides of the ice bin. Corrective action was taken and ice was burned during time of inspection. Sanitarian advised Person in Charge to wash, rinse and sanitize surfaces before resuming ice operations.
20 -Turkey and orange juice was held at 49 degrees F rather than 41 degrees F or below as required. Person in Charge took corrective action and relocated items.
-Cheese held at 50 degrees F, rather than 45 degrees F or below as required. Corrective action was taken and cheese was relocated.
26 Working containers in food preparation area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical. Corrective action was taken and bottle was labeled.
34 Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in refrigerators in basement.
36 An insect control device located in food preparation and warewash area with potential to contaminate food, equipment, and / or utensils. Person in Charge took corrective action and removed fly paper.
