1 Food Safety Certified person was able to demonstrate some knowledge on the Food Employee Health Policy. PIC reported 2/5 Food Borne Illnesses and some symptoms. **PIC was taught the acronym Send Sick Employees Home Now and provided with the Employee Health Policy Sheet during time of inspection.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours. **PIC took corrective action and properly washed, rinsed, and sanitized food contact surfaces of slicer during time of inspection.
