1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code regarding the temperature of TCS foods. Note: The person in charge was instructed to keep TCS food at 41 degrees F at all times.
20 Chicken in the reach-in refrigerator was observed at 53 degrees F. Lettuce and tomatoes in he cold preparation unit were observed at 55 degrees F. Note: The person in charge was instructed to remove the chicken from use, and maintain temperature time logs.
31 The reach-in refrigerator and the cold preparation unit were observed at 55 degrees F instead of 41 degrees F.
