14 Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwashers was 0 ppm, and not 50-100 ppm as required. Discontinue using dishwasher until fixed.
14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 500 ppm, rather than 200 ppm as stated on the manufacturer's use directions. Person in Charge took corrective action and remade sanitizer.
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. Time temperature logs observed incomplete and missing information.
27 Food facility packaging chicken, crabs, beef, and smoked trout, using reduced oxygen packaging without the required written procedures or HACCP plan.

PIC arrived during time of innspection.

-Black residue observed on the interior of the A Bar ice bin.
