1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.
-Food Safety person arrived in middle of inspection.
8 The handwash sink in the rear warewash area was blocked by food equipment and not accesible at all times for employee use.
8 Soap was not available at the handwash sink in the front prep area.
8 Hot water observed not available at handsink in front prep area. Hot water observed at 68 degrees F.
8 No sign or poster posted at the handwash sink in the front prep area to remind food employees to wash their hands.
14 The can opener had an accumulation of food residue, and rust on the food contact surfaces.
21 Potentially hazardous ready to eat food, prepared in the food facility and held for more than 48 hours, located in the food prep refrigerator, was not date marked including cut peppers, cut onions and salad ingredients.
22 Time in lieu of temperature being used as a control for potentially hazardous foods.
-Pizza slices observed stored out of temperature control without documentation of disposal time.
