1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code in relation to the proper wash, rinse, sanitize procedure. The correct procedure was explained.
8 Paper towel dispenser empty at the handwash sink in the prep and employee restroom area. Paper towels were provided.
8 Hot water was initially not available at the handwash sink in the employee restroom. Hot water was turned on.
14 Black residue, pink slime observed on the interior of the ice machine bin. Ice machine was cleaned.
37 Food boxes were not stored at least 6 inches above the floor in the walk-in freezer.
41 Spoons observed in stagnant water.
Knives and / or cleavers were stored between table edges which are not easily cleaned and sanitized.
45 Crates were being used for elevation in the walk-in boxes and basement area.
46 Facility did not have proper stoppers for the warewashing sink.
47 General cleaning needed:
- Residue build-up observed on the catch basin
- Ice accumulation in the walk-in freezer
- Food debris observed under shelving in the walk-in boxes
48 Hot water was turned off at the handwash sink in the restroom. Water was turned on.
53 Missing ceiling tiles observed in the basement.
