1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. ** No food safety certified person present at the time of the inspection.
6 Food employees hands observed soiled by food and is not washing his hands between tasks because there is no soap or paper towels present at the handwashing sink. ** Advised to ensure food employees are washing their hands between each task.
8 Soap, paper towels, and handwashing reminder signage not present at the handwashing sink. ** Advised to supply the necessary supplies for adequate handwashing.
8 Handwashing sink observed obstructed by a container. Corrective Action: The container was relocated.
9 Food cart is unable to provide documentation to proof they have an active relationship with a commissary. ** Mobile Vending Operation Support Facility Information Form was distributed and the employees were advised to fill out the form and maintain it at all times while the cart is open and operating.
14 -One set of tongs present at the cold salad station in the food cart for operating for more than four hours. -Observed knives stored between the wall and piping in the food cart. -Food cart is unable to provide documentation to proof they have an active relationship with a commissary. ** Food contact surfaces are not being replaced at least every four hours. Advised to return to the commissary and wash, rinse, and sanitize all food contact surfaces.
19 Observed rice stored inside the rice cooker stored at 111.9 degrees F instead of at least 135 degrees F. ** Advised to discard the rice.
20 Observed all cold foods stored on the food cart not stored at 41 degrees F or below. -Lettuce on the counter was stored at 56.1 degrees F. ** No method of cold holding was present. -Cucumber on the counter was stored at 56.4 degrees F. ** No method of cold holding was present. -White sauce in the under counter unit was stored at 53.4 degrees F. -Lettuce in the under counter unit was stored at 51.7 degrees F. -Ambient Air in the under counter unit was measured at 61.0 degrees F. ** Advised to discard all potentially hazardous foods present on the cart.
