1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code regarding time and temperature control methods.
Note: Time instead of temperature as a control was reviewed with the person in charge.
20 Potentially hazardous food in the open display cases was observed at 45-47 degrees F.
Note: The person in charge was instructed to maintain potentially hazardous cold-held food at 41 degrees F or less.
22 Time and temperature logs were incorrectly filled out.
Note: The person in charge was instructed to monitor and record the appropriate temperature of the food in the buffet as recorded on their temperature control device. Any potentially hazardous food after four hours at temperatures between 41-135 degrees F must be discarded.
31 The temperature in the open display cases was observed at 45-47 degrees F.
37 The buffet area and juicer machine were not monitored by the staff.
37 The rear storage areas such as the cargo unit and walk-in coolers are not protected from splash and are not maintained separate from the dumpster area.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
**No food safety certified person was present at the Sanitarian's arrival. Food safety certified person arrival during the inspection.
4 An open employee's beverage container was observed in a food preparation area.
6 Employee was observed washing gloves with plain water in food prep sink. Sanitarian reminded PIC of proper handwash procedures. Employee initiated corrective action.
8 The handwash sink in the prep area was blocked by prep and not accesible at all times for employee use. Food employee relocated the items at the time of the inspection.
8 - No handwash sink observed in the bakery prep area and the dishwasher area.
- Employee was observed peeling potatoes in the employee storage room without a handwash sink conveniently located.
**Handwashing facilities. A handwashing facility shall be located as follows: (1) In food preparation, food dispensing and warewashing areas to allow convenient use by employees.

14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions.

13 - Several uncovered cooked food and uncooked food observed in the walk-in cooler and reach-in freezer.
PIC covered some cooked food during inspection.
14 Slicer, meat slicer, and meat grinder observed with accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
14 - The ware wash (3-compartiment) sink not properly setup for sanitation of utensils and equipment; utensils, pots, and pans observed being washed in the rinse compartment of the 3 compartment sink, sanitizer compartment was not set up for sanitization.
*Sanitarian educated the PIC on how to properly setup the 3 compartment sink. A return demonstration of Wash-Rinse-Sanitize setup was observed prior to completion of inspection.
18 - Cooked food (fish) was not cooled from 135 degrees F to 70 degrees F in 2 hours. The fish was measured at 92 degrees F and the person in charge did not provide any cooking time.
19 - The food (fried chicken , kebab, fries, liver) was held between 57 to 60 degrees F rather than 135 degrees F or above as required.
