13 Food observed thawing in the warewashing sink instead of the prep sink. Food was relocated to the prep sink.

No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
6 Hot water was initially observed at 84 degrees F instead of a minimum of 100 degrees F as required. Pilot light went out under the water heater. Hot water was later observed >100 degrees F.
8 Handwash sink was not conveniently located (within 25 ft) in the warewashing area.
14 Observed dishes being washed in the food prep sink with no chemical sanitizer being used after washing and rinsing them. Person in charge was instructed on the proper way to wash, rinse, sanitize dishes, utensils/equipment.
20 Potentially hazardous food was held in the bain marie at 47-49 degrees F rather than 41 degrees F or below as required. Temperature of the unit was adjusted.
