1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
Person in charge observed with a SS. Emailed application during the time of inspection.
20 Butter was held at 68 degrees F rather than 41 degrees F or below as required.
Sanitarian advised that the lid to the cold prep be closed when not in use. Also to place ice under the butter to keep at the proper food temp.
37 Food and beverages are not stored at least 6 inches above the floor in walk in cooler, freezer, and prep area.

8 Paper towel dispenser empty at the handwash sinks. Person In charge placed paper towlels at all sinks during the time of inspection.
14 The sanitizing concentration in the sanitizing buckets showed no sanitizer, rather than 50-100 ppm as required.
The person in charge dumped out the sanitizing buckets and placed the proper ppm water inside.
35 Working bulk food ingredient storage containers are not labeled with the common name of the food.

8 Hot water at the handwashing sink in the warewashing area reached a peak of 65 degrees F.
Temperature was adjusted during the inspection.
20 Steak (45 degrees F), hamburger patties (47 degrees F), chicken (46 degrees F) were held between 45-47 degrees F rather than 41 degrees F or below as required.
Food items were relocated to the walk-in cooler to rapidly chill. The ambient air temperature of the under-counter cooler was 50 degrees F. Use of the unit was discontinued until it is repaired and properly holding 41 degrees F or below.
