1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code regarding temperature control and date marking. Note: The person in charge was instructed to date mark and time stamp food accordingly.
13 Fried chicken that was cooling in the ambient air was not covered. Grease was observed hanging from the vents in the exhaust hood and dripping into the cooking station. Note: All food must be covered outside the coolers or hot hold units. An employee cleaned the vents.
18 The chicken was observed cooling in the ambient air without a monitoring method such as time control. Note: The person in charge was instructed to monitor the food when it cooled in ambient temperatures within 2 hours, from 58°C (135°F) to 21°C (70°F), and within 6 hours, from 58°C (135°F) to 5°C (41°F).
20 Potentially hazardous food is stored at ambient temperature without proper time stamps, which include date and time. Note: The person in charge was instructed to provide time stamps for food stored outside temperature control units.
