Note: A food safety-certified person arrived within 30 minutes of the inspection.
14 The sanitizer basin was empty.
Note: The person in charge was instructed to keep the sanitizer full.
45 A domestic reach-in freezer was observed in the rear area. Soda crates were inverted to elevate items. The stopper at the three-compartment sink did not work properly.
45 Unfinished wooden dunnage racks and soda crates, which are not smooth and easily cleaned, were being used for elevation in the rear area and walk-in cooler.
47 Flour was observed on surfaces in the preparation area.
47 Grease and debris were observed on the wired shelving.
53 Clutter was observed in the rear.

No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (pizza) without written procedures or documentation to verify disposition of food. Pizza was discarded.
