6 Observed a food employee wash their hands at the food prep sink.
** Advised for food employees to only wash their hands at the handwashing sink.
6 Food employee observed donning single use gloves without a prior hand wash.
Corrective Action: The food employee removed the gloves and washed their hands.
8 Soap not present in the bathroom.
** Advised to supply soap at all handwashing sinks.
8 Handwashing sink in the prep area observed obstructed by a large bucket.
Corrective Action: The bucket was removed.
14 Observed the rinse and sanitize basins at the three basin sink obstructed by the cold prep refrigerator and table with the deli slicer where food employees are unable to wash, rinse, and sanitize food contact surfaces.
** Advised to organize the equipment in the prep area so the three basin sink is always accessible. A sanitizer bucket was introduced and food employees were instructed to utilize the sanitizer bucket until they may fully access the three basin sink.
14 The quaternary ammonium concentration in the sanitizing solution of the sanitizer bucket was 500 ppm, rather than 200 - 400 ppm as stated on the manufacturer's use directions.
Corrective Action: Water was added to the solution and it retested at 300 ppm.
20 Foods in the cold prep refrigerator were stored at 52.9 - 56.9 degrees F instead of 41 degrees F or below.
Corrective Action: Potentially hazardous foods present were relocated to the closed display case or discarded.
** Advised to get the unit serviced so it can maintain proper temperatures.
26 Observed the sanitizer tablets stored above the three-basin sink instead of beneath to prevent over sanitization.
