1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. *The person in charge could not demonstrate proper sanitizing techniques for washing, rinsing and sanitizing utensils and cooking equipment at the 3 basin sink. *The Sanitarian reviewed the proper washing, rinsing and sanitizing method with the person in charge and the PIC was able to demonstrate it
11 Dented canned beverage observed in the storage area. The beverage was packed to be returned to the seller.
36 Observed a trapped bird frying around the dry storage area. *Dead or trapped birds, insects, rodents and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition or the attraction of pests. *The person in charge confirmed the invitation of the animal control coming to take it out.

36 -Live mouse observed in the poultry prep room. -Small and large flies in the storage room adjacent to the produce prep area. -Visible physical evidence of rodent activity (mice feces) observed in the following areas: Floor beneath the handwashing sink and 3-bay sinks in the fryer/ready meal area, floor beneath the flour bin in the "Ready meal" area, along the perimeter the "Ready meal area, perimeter and floor along the fryer equipment area, floor beneath the cooking equipment, in the seafood department's corner beneath the metal food prep table, and in the upstairs dining room area floor near railing and corners.
45 -Loose rubber door gaskets observed on the walk in freezer near the deli. -The top of one cold preparation unit in the hoagie prep area is inoperable.
47 -Chips and debris observed on the retail shelves of the snack aisles. -Vent cover in the employee restroom observed with an accumulation of dust.
53 -Debris, mice feces, and grease observed on the floors of the fryer and hot food prep area and ready meal area. -Debris and old mouse feces observed on the floor of the upstairs dining room area. -Debris observed on the floors and perimeters of the Starbucks station. -Water and debris observed on the floors of the produce walk in cooler. -Debris observed on the floors of the receiving area.

8 Soap and paper towels was not available at the handwash sink in the front hot food prep area. Person in charge provided soap and paper towels to the area.

A food safety application has been emailed.
8 Soap was not available at the handwash sink in the hoagie prep area. Paper towel dispenser empty at the handwash sink in the hoagie prep area. The deli assistant manager provided soap and towels to the area.
14 The can opener in the ready meal area had an accumulation of food residue on the food contact surfaces. The person in charge washed, rinsed, and sanitized the can opener during the inspection.
36 -Visible physical evidence of rodent activity (mice feces) observed in the following areas: Floor between the sushi and chicken station, floor beneath the flour bin in the "Ready meal" area, along the perimeter the "Ready meal area,perimeter and floor along the fryer equipment area, in the corner of the walk in cooler in the produce back room beneath the shelf, in the seafood department's corner beneath the metal food prep table, and in the upstairs dining room area floor near railing. -Potential rodent harborage areas inside the food facility observed in the shelf storage area (behind retail freezers, front of store) due to equipment clutter.
