14 The quaternary ammonium concentration in the sanitizing solution of the 3-bay ware washing sink was 50 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions. **Person In Charge (PIC) added more tablets to the water, and the sanitizing solution concentration tested at 200 ppm after the corrective action.
14 Observed the 3-bay ware washing sink setup incorrectly (wash, sanitize, rinse). **PIC reset the 3-bay ware washing sink in the proper format during the inspection.
