1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. Corrective action: Certificate was retrieved from another location.
1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. -Person in charge set up the warewashing sinks incorrectly. -Person in charge did not demonstrate proper warewashing. -Person in charge wiped the utensil with a dish cloth after sanitizing.

Corrective action: Cut melon below 45 degrees F was moved to the back of the open display case. Items above 45 in the closed display case were discarded. Non-dairy items below 45 degrees F were moved to a colder unit. Cold prep refrigerator temperature was adjusted and went down.

6 A food employee was observed washing their hands at the warewashing sink rather than the designated handwash sink.
8 A pineapple and a container with wiping cloths was observed in the handwash sink in the food prep area. Note: Handwashing sinks must be accessible at all times for employee use. Food should never come into contact with the handwashing sink or the warewashing sink.
11 Rotting, budding potatoes observed in storage bin in the retail area. Corrective action: PIC observed going through potato bin to remove rotting food.
13 Eggs were observed stored above cheese in the closed display case. Note: Animal foods may not be stored above ready-to-eat food.
14 -Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours. Person in charge (PIC) stated that the slicer is not in use because it is broken. -Soiled slicer part observed stored on the drying rack above the warewashing sink. -Water bottle observed stored on slicer. Corrective action: PIC instructed to wash, rinse, sanitize and air-dry the items.
