Corrective action : Person in charge increased temperature of hot holding unit and the prepared sandwiches were measured at temperature of 144 degrees Fahrenheit prior to completion of inspection.
20 Sliced tomatoes and cut lettuce in prep area were held at 58- 72 degrees F rather than 41 degrees F or below as required.
Corrective action : Person in charge removed / discarded the out of temperature sliced tomatoes and cut lettuce from food prep area; Replaced with cut lettuce & sliced tomatoes from walk-in cooler, which were measured at temperature of 34 degrees Fahrenheit during inspection.
