20 * Cheese and ham &cheese sandwiches were held at 65.7 degrees F rather than 41 degrees F or below as required.
-These items were removed.
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food.
-The cold holding unit is not holding foods 41 degrees or below. Provide a time temp log from the time the food was initially prepped to the time it arrives on the truck to be served. All foods must be discarded after 4 hours. The facility has agreed to do time-temp logs until the unit is fixed.
45 The cold holding unit is not in good repair; the ambient air temp of the unit was 64 degrees F.
-A repair company was called during the time of inspection.
47 Moldy bread observed under the drawers in the bottom of the cold holding unit.
53 Debris and old mouse feces observed on the floor perimeters.
-This area was cleaned during the time of inspection.
