Corrective action: Instructed food employee to remove items from the handwashing sink.
14 Some food residue was observed on the blade of the slicer which has not been used since yesterday. Food contact surface is not being washed, rinsed and sanitized at least every 4 hours. Person in charge was instructed to take the slicer apart and to clean it properly.
20 Potentially hazardous food was held at 52 to 66 degrees F rather than 41 degrees F or below as required. Per food employee, cold prep unit was unplugged overnight (with food inside) for defrosting.
Corrective action: Food employee was instructed to discard all food.
