1 Food Safety Certified person demonstrated knowledge of four out of five Food Borne Illnesses. **PIC was taught the five Food Borne Illnesses, their signs and symptoms, and issued the Food Employee Health Policy during time of inspection.
8 Hot water does not reach peak demand at one handwashing sink in the women's employee restroom. Hot water observed at 70 degrees F. **PIC was instructed to temporarily mark handwashing sink in women's employee restroom room out of service and to utilize other handwashing sink that reaches peak demand until serviced by maintenance.
13 Raw chicken observed stored above cooked foods. **PIC took corrective action and properly stored cooked and raw meats during time of inspection.
36 Visible physical evidence of rodent activity (mouse feces) observed on lower interior surfaces of fryers in food prep area and around perimeters of floors in the basement area.

47 The following were observed: -Light food debris around perimeters of floor in walk-in cooler/freezer -Static dust on fan guards in walk-in coolers -Ice accumulation around perimeters of ceiling/floors in walk-in freezer and on interior surfaces of chest freezer -Grease accumulation and mouse feces on lower interior surfaces of cooking equipment (fryers) **PIC was instructed to discard mouse feces and properly wash, rinse, and sanitize interior surfaces of cooking equipment during time of inspection.
