13 -Raw chicken was stored above raw beef, and pork. Person in Charge took corrective action and relocated items.
-Raw eggs were stored above ready to eat foods in the walk-in cooler. Person in Charge relocated items.
-Bar ice and sausage observed uncovered. Person in Charge covered ice and sausage.
20 Cheese held at 49 degrees F, rather than 45 degrees F or below as required. Person in Charge relocated item to another fridge to bring down food temperatures. Sanitarian advised Person in Charge to discontinue using refrigeration unit until fixed.
21 -Cheeses, opened commercially processed ready to eat food, located in the walk-in cooler and refrigerator, and held more than 48 hours, was not marked with the date it was opened.
-Cut lettuce and tomatoes and pasta, potentially hazardous ready to eat food, prepared in the food facility and held for more than 48 hours, located in the cold prep units and walk-in cooler, was not date marked.
