1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
The person in charge had a class certificate but no Philadelphia Health Department issued Food Manager Food Safety Certificate.
The person in charge provided a receipt for The Philadelphia Health Department issued certificate by email.
8 Paper towel dispenser empty at the handwash sink in the front prep area.
They were provided.
8 -Hot water at or above 100 degrees F was not readily available at the front handsink in the cooking/prep area. It was probed at 69.8 degrees F initially.
Hot water at or above 100 degrees F was not readily available at the only hand sink in the walk in cooler prep area.
The water was probed above 100 degrees F at these hand sinks by the end of the inspection.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being taken apart, washed, rinsed and sanitized at least every 4 hours.
An employee began cleaning the slicer.
19 Salmon was held at 121 degrees F rather than 135 degrees F or above as required.
Rice was held at 119 degrees F in the warmer.
The pan were discarded since there was no time/temp log readily available for review.
40 Antimicrobial fruit and vegetable dispenser observed dispensing solution above the required amount.
Employees added water to the solution to bring the solution into the required range.
45 Equipment was not in good repair.
-There was a leak at a hand sink pipe.
-A pipe was observed not attached at the hand sink in the walk in cooler prep area.
-Antimicrobial fruit and vegetable wash cleaner dispenser is dispensing excess solution.
-The digital screen on the warewash machine is damaged.
-Non-NSF approved microwaves observed in the employee cafeteria.
-3 bay sink faucet observed leaking.
-An ice cream freezer is out of order and not in use.
45 Cardboard liners used on shelves are not smooth and easily cleaned.
Wood pallets are used to elevate items rather than NSF approved dunnage racks.
46 No data plate / pressure / temperature monitoring device on the mechanical dishwasher.
46 Yellow residue observed on inner surfaces of the warewash machine.
48 Water at or above 100 degrees F was not provided at two hand sinks in the cooking/prep and walk in cooler prep areas.
Hot water was provided by the end of the inspection.
49 Backflow prevention device not observed on the hose bib in the warewash area.
51 Static dust on the ceiling vent cover in the women's toilet room.
53 Observations:
-Food debris on floor perimeters in the produce prep area.
-Static dust on ceiling surface in the warewash area.
53 Gaps observed between surfaces in the walk in cooler.
53 Brooms and dust pans are stored on the floor rather than hanging on utility racks.
54 The fryer on the Halal side is not at least 6 inches overhang of the exhaust hood system underneath fir suppression nozzles.
