2 The person in charge could not properly identify all five of the reportable food-borne illnesses
8 Old food residue,plastic container and utensils (knife &tongs) observed inside the food prep area handwash sink.
Corrective action : Person in charge cleaned to remove old food residue and plastic container, and utensils from the food prep area handwash sink prior to completion of inspection.
14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 50 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions.
Corrective action : Sanitarian advised person in charge to add more quarternary ammonium compound tablets to the sanitizing solution, which was measured at 300 ppm prior to completion of inspection.

Corrective action :A food employee dismantled, washed, rinsed and sanitized the food slicer prior to completion of inspection.
* Food slicer should be washed, rinsed and sanitized at least every 4 hours when in use.
