1 Staff were not able to demonstrate how to properly set the Three Basin Sink to WASH/RINSE/SANITIZE food contact items (deli slicer). Any removable pieces from the deli slicer should be washed and sanitized in the Three basin sink.
The three basin sink should be set and used in the following manner.
1. WASH- hot water and soap
2. RINSE- plain water
3. SANITIZE- warm water and sanitizer
All items must be allowed to air dry after soaking in the sanitizer.
8 The handwash sink in the kitchen area was blocked by milk crates and not accesible at all times for employee use.
