**Person in charge arrived during the inspection.
6 Food employees observed donning single use gloves without a prior hand wash.
**Employee was instructed to wash hands before and after.
11 Ribs were being thawed in stand still water in a bucket and not inside the food prep sink.

1 The certified handler was not present at the start of inspection, he arrived prior to completion of the inspection.
1 - Unaware of temperature control for food.
** Sanitarian discussed the cooking (hot and cold) temperatures during inspection.
- The Food Safety certified person has no adequate knowledge of the PA Food Code. The PIC could not identify the five food borne illnesses that need to be reported to the Health Department.
* Sanitarian explain the 5 food borne illnesses to the certified person at the time of inspection.
8 Paper towel dispenser empty at the handwash sink in the service area.
13 - Uncovered chicken observed in the warewashing area stored on the plastic crates.
14 - The warewash ( 3-compartment) sink not clean to sight and not properly setup for sanitization of multi-use utensils and food equipment; debris present in all bays of the 3-compartment sink and a sponge in the sanitizer compartment.
*Sanitarian explain to the person in charge the wash, rinse, and sanitize process during inspection.
14 The can opener had an accumulation of food residue on the food contact surfaces.

*Sanitarian instructed the person in charge to provide dated for the food in the facility.
22 - Fried chicken observed at 58 degrees F and breaded chicken observed at 66 degrees F on the prep table kitchen area.
PIC discarded the fried chicken and breaded chicken during inspection.
*The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.
