The Person in Charge provided proof of submission for the City of Philadelphia Food Safety Certificate.
14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 100 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions.
More quarternary ammonia tablets were added to the sanitizing basin to raise the concentration to 200 ppm.
36 The rear entrance to the food facility does not protect against the entry of insects, rodents, and other animals. Daylight was visible under the door.
45 The handsink in the kitchen area was not properly sealed to the wall.

14 Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required.
Sanitizer bucket connected to the machine was observed empty. Bucket was replaced with a full bucket, but no residual sanitizer was observed. Facility was instructed to use the 3-compartment sink for proper washing, rinsing, and sanitizing, until the dishmachine is repaired.
43 Boxes of single-service items were observed on the floor of the dry storage closet by the kitchen; not stored 6 inches or more off the floor.
45 Laminated shelving holding coffee machines were peeling/in poor repair.
45 Raw wood shelving was observed in the basement storage area.

Paper towels were provided during the inspection.
14 The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required.
The machine was primed during the inspection and no sanitizer was detected. Facility was instructed to use the 3-compartment sink to wash, rinse, and sanitize until the warewashing machine was properly functioning. Repairs to the machine were immediately initiated during the inspection.
