1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. Person in charge arrived during time of inspection.
13 -Raw chicken were stored above ready to eat foods in the walk-in cooler. Raw eggs were stored above ready to eat foods in open case. Person in Charge took corrective action and relocated items.
20 -Prepackaged foods was held between 49-54 degrees F rather than 41 degrees F or below as required. See discard list.
-Cut tomatoes and cut lettuce was held at 48 degrees F rather than 41 degrees F or below as required.

Application emailed.
1 The Person in Charge did not demonstrate adequate knowledge of the 3-bay ware wash procedure:
1. Wash (soap and water).
2. Rinse (clean water).
3. Sanitize (sanitizer and water).
