* The person in charge relocated eggs to bottom shelf.
14 The quaternary ammonia concentration in the sanitizing solution of the 3-bay ware wash sink was 500 ppm, rather than 200 -400 ppm as stated on the manufacturer's use directions.
* The person in charge refilled 3 compartment sink with tablets. Sanitizer observed at 200ppm.
20 Food (Tomatoes, Ham, Salmon, Spinach, Sausages & cheese was held at 47-55 degrees F rather than 41 degrees F or below as required.
* Food items were discarded.
