21 Potentially hazardous ready to eat food prepared in the food facility and held for more than 48 hours was located inside the walk-in cooler and was not date marked. The Chef removed and discarded items from the walk-in cooler, while on site.

14 - The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewashing sink was 0 ppm, rather than 200 ppm as stated on the manufacturer's use directions. - The food-contact surfaces of equipment and utensils did not reach 160 degrees F during the sanitizing cycle of the high temperature dishwasher as evidenced by the failure of the temperature indicator. **The bottle of quaternary ammonium was replaced at the time of the inspection. **The dish machine was turned off at the time so that the 3-bay warewashing sink could be utilized until the dish machine has reached the proper rinse temperature.

The HACCP plan was reviewed again today by the Sanitarian and in compliance. When management obtains new equipment and want to start fresh juice bottling, please call 215-685-7495.
