*The PIC discarded both items.
20 Cheese, mayo, eggs held at 46-52 degrees F, rather than 45 degrees F or below as required in the cold prep unit.
34 Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in the cold prep unit.
45 The following observations were noted:
-3 Non NSF/ANSI Chest freezer and microwave
-1 Non NSF/ANSI deep fryer
-Chest Freezers lid not in good repair
-A splashguard was not observed between the prep sink and the handwash sink in the kitchen.
-Cold prep unit not maintaining 41 degrees F or below as required.
*PIC instructed to discontinue use of the unit until holding observed at the appropriate temperature.
45 Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.

Corrective action: Food safety person arrived prior to completion of inspection.
No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.

Corrective action: Person in charge removed dishes and utensils during the time of inspection.
11 Dented canned items (Cheese) observed in food prep area.

*Health sanitarian provided employee health policy and demonstrated how to properly wash, rinse and sanitize.
11 The following observations were noted:
-5 dented Campbells canned items on retail area shelving.
-13 expired Gerber baby food items on the retail area shelving dated 2022 and 2023.
Corrective action: Person in charge removed and discarded items during the time of inspection.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
