14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 50 ppm, rather than 200- 400 ppm as stated on the manufacturer's use directions.
Corrective action : Sanitarian advised person in charge to add more quarternary ammonium compound tablets to the sanitizing solution, which was measured at 300 ppm prior to completion of inspection.
20 Cheese, mayonnaise, cut lettuce and sliced tomatoes in food prep area cold-prep refrigeration unit were held at 58-63 degrees F rather than 41 degrees F or below as required.
