1 Food Safety Certified person was not present at the start of inspection.
**No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
**Food Safety Certified person arrived by end of inspection.
8 The following were observed:
-No sign or poster posted at the handwashing sink in the bar area to remind food employees to wash their hands
-Paper towel dispenser empty at the handwashing sink in the bar area
-Soap was not available at the handwashing sink in the bar area
**PIC took corrective action and provided soap, paper towel, and sign at handwashing sink in bar area during time of inspection.
14 The following were observed:
-The can opener had an accumulation of food residue on the food contact surfaces
-Pink slime observed on the interior of the ice machine bin.
**PIC was instructed to discard ice and properly wash, rinse, and sanitize interior surfaces of ice machine and can opener during time of inspection.
26 Working containers in food prep area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical.
**PIC took corrective action and labeled chemical bottle during time of inspection.
34 Temperature measuring devices for ensuring proper temperatures of food are not available or readily accessible in under-the-counter/reach-in refrigeration units in bar area.
36 Several glue traps observed with dead insects in food prep area and storage room area.
**PIC was instructed to discard glue traps during time of inspection.
**Removing dead or trapped birds, insects, rodents and other pests. Dead or trapped birds, insects, rodents and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition or the attraction of pests.
45 The following were observed:
-Condensation leak in walk-in cooler
-Pipe leak under 3 bay ware-washing sink
46 Food facility lacks sanitizer test strips to monitor sanitizer concentration.
47 The following were observed:
-Light debris on exterior surfaces of shelving units
-Food debris/residue around perimeters of floors in walk-in coolers
-Grease accumulation on cooking equipment
-Static dust on fan guards in walk-in coolers
-Light food debris on lower interior surfaces of reach-in freezer units
48 One to five minute delay in hot water reaching peak demand in men's and women's employee restroom areas.
49 Slow draining handwashing sink in food prep area.
53 Several brooms and dustpans observed stored on floor and not elevated on a utility rack designated for maintenance tools.
53 Static dust/debris, food debris, and grease accumulation observed around perimeters of floors in food prep and storage room area.
54 One light observed out under exhaust hood.
