13 The following observations were noted: -Raw beef improperly stored in the chest freezer food prep area. -Raw chicken improperly stored above raw beef in the reach-in refrigerator in the rear storage area.
14 Observed 3 dead flies floating in the water in the Wash & Rinse compartment of the 3-compartment warewash sink. *Corrective action was taken the person in charge, drained the water, cleaned the 3-compartment warewash sink and properly setup the 3-compartment warewash sink.*
20 Observed deli meats held at 44.4 degrees F rather than 41 degrees F or below as required in the Closed Display Case in the food prep area. ***Person in charge informed me that a technician is scheduled to fix the issue has been made.***
22 Observed cold shredded chicken stored a large pot on stovetop, temperature measure at 55.1 degree F -Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods held in hot-hold unit without written procedures or documentation to verify disposition of food.

11 Severely dented, swollen, distressed canned items observed in on retail shelf in the retail area and bottom storage shelf in the rear storage area. *Corrective action was taken, person in charge removed/relocated the severely dented canned items form shelf in the listed areas at time of inspection.*
13 Individually packaged raw fishes observed stored with pre-cooked food in the reach-in freezer in the retail area.
19 Observed cooked food held in hot-holding unit in the front retail area food temperature measured between 108.3 - 118 degrees F rather than 135 degrees F or above as required.
