21 Cooked rice, prepared in the food facility and held for more than 48 hours, located in the walk-in cooler, was not date marked.
**Person in charge date marked the hotel pan of rice at the time of inspection.
38 Food employees observed not wearing or wearing ineffective hair restraints, such as nets, hats, or beard restraints.
41 Knife stored between table edges which is not easily cleaned and sanitized.
45 Rusting/deteriorating:
- Base surface of the cold prep fridge on the line.
- Lower shelving of some prep tables.
45 Equipment:
- Chest freezers in the basement are not NSF/ANSI certified.
- Soda crates being used in the basement for elevated storage.
- No splash guard between the handwashing sink and the 'wash' bay of the 3 compartment sink in the warewashing area.
- The lid of one of the chest freezers is broken.
- The exterior fan of the walk-in cooler in the basement does not have a cover.
