1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. -Food Safety person arrived in middle of inspection.
8 The handwash sink in the rear prep annd employee restroom area does not have single use towels, continuous towels, or air drying device.
20 Several food items were held between 57-67 degrees F rather than 41 degrees F or below as required due to refrigeration unit cut off the evening before. All food items left in unit over night must be discarded immediately.

1 * No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
14 * No chemical sanitizer solution was observed in use for the food contact surfaces and at the 3-basin sink. * One out of three working sink stoppers are observed at the 3-basin sink. First basin has bottle lid being used as a sink stopper. * Counter mounted can opener near the 3-basin sink had an accumulation of food residue on the food contact surfaces.
14 * Interior surface of the 3-basin sink is not clean to sight and touch.
20 * Large container of tomato sauce was held at 50.7 degrees F rather than 41 degrees F or below as required. The sanitarian did review cold holding procedure with the person in charge during the last inspection.
26 * Bottle of Disinfectant and Glass Cleaner are stored on the pizza prep station near the oven.
34 * Thermometer are not observed in the refrigerator portion of the pizza prep.
35 * Large container of flour in the front prep area is not properly labeled.

1 * The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. The certified person could not explain proper cold holding temperature. The sanitarian did explain the proper 41 F or below is required for proper cold holding temperatures.
8 * Paper towel dispensers are empty at the hand wash sink in the front food prep area and in the employee restroom area. Paper towel was provided at the hand sink station in the front food prep area.
14 * Several cutting utensils has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours. The sanitarian advised the person in charge to remove the soiled utensils out of service, during time of inspection.
20 * Large container of tomato sauce was held at 67.9 degrees F rather than 41 degrees F or below as required. The sanitarian did review proper cold holding procedure with the person in charge and the container of tomato sauce was discarded during inspection.
34 * Thermometer are observed in the refrigerator portion of the pizza prep.
35 * Large container of flour in the front prep area is not properly labeled.
