14 Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwashers in El Techo bar and kitchen were 0 ppm, and not 50-100 ppm as required. Corrective action: The machines were repaired during the inspection.
26 Dichlorvos pest strip observed at the mop sink in the basement kitchen was not being used according to the manufacturer's directions. Corrective action: the pest strip was discarded.
41 Food containers without handles observed in direct contact with bulk food ingredients in the Condesa dry storage area.
45 -Ice accumulation observed where the wall meets the floor on the exterior of the walk-in freezer and on the fire suppression sprinkler head in the walk-in freezer in the basement kitchen. -One ice machine was observed out of order in El Techo Kitchen. -Out of order cold prep unit observed in the Condesa kitchen.
45 Cutting board observed with deep scratches and pits not allowing for effective cleaning and sanitizing observed on a cold prep unit in the Condesa kitchen.
47 -Residue observed on the floor under shelving in the El Techo and Condesa kitchen walk-in coolers. -Debris observed on shelving in the café area. -Residue observed in the cabinet under the hand wash sink in the café area.
48 Maximum hot water temperature in the Condesa dish washing area was 77.8 rather than 100 degrees F as required. Corrective action: the water heater was adjusted and the sink was later probed at 108.5 degrees F
51 -Residue observed on the walls of several stall in the El Techo toilet rooms. -Dust accumulation observed on a vent cover in the Condesa Men's toilet room.
53 -Dust accumulation observed on the vent cover over the dish shelf in the El Techo dishwashing area. -Missing wall material observed on the threshold of the mop closet area in the Condesa kicthen.

14 Chlorine chemical sanitizer residual detected was 0 ppm, and not 50-100 ppm as required at the warewashing machines in El Techo bar and kitchen areas. Corrective action: staff agreed to sanitize wares in the 3 bay sink.
14 Residue observed on the tray of an ice machine in El Techo kitchen. Corrective action: the tray was removed and cleaned.
26 Dichlorvos pest strips located at the Condesa and El Techo bars were not being used in accordance with the manufacturer's directions. Dichlorvos strips are to be used in non-food prep areas that are occupied by people for less than 4 hours a day. Corrective action: the strips were discarded.
36 Visible physical evidence of rodent insect activity (small flies) observed in El Techo warewashing area.
45 -Ice accumulation observed on the mechanical components of the walk-in freezer in the basement. -One ice machine was observed out of order in El Techo Kitchen.
46 No quaternary ammonia test strips were present and quaternary ammonia was being used in the warewash sink in the Condesa kitchen.
47 -Ice and standing water observed on the floor of a walk-in cooler in the basement.
49 Leak observed in the warewashing machine in El Techo warewashing area.

53 -Debris observed on the floor under the charcoal grill in the Condesa kitchen. -Grease observed on the floor near the fryers and stoves in the Condesa Kitchen. -Mouse droppings and debris observed in the floor corners of the dry storage area adjacent to the Condesa Kitchen. -Debris, broken glass, and food observed on the floor under counters and equipment in the Condesa bar area. -Standing water observed under the warewashing machine in El Techo kitchen.
