13 Food storage: protection from contamination **Cases of soda are stored on racks within 12 inches of hand sink and 3 basin sink. Moved. **A covered container of raw chicken was stored on a shelf above sleeves of american cheese. Moved.
39 Sponges observed in the 3 Basin Sink being used to clean food contact surfaces. Sponges can hold bacteria and are not recommended by the Health Department for use in commercial kitchens. **Sponges are not satisfactory as they can hold bacteria
41 Spoon used to stir coffee is stored in a cup of plain water. These need to be washed and sanitized every 4 hours.
45 Non commercial equipment in use- microwave, propane stove.
45 Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.
49 Water is leaking from the water line to the hand sink in the rear room.
53 Broom, dust pan, and/or mop were seen resting on the floor between uses rather than being stored up on a rack.
53 Cleaning issues: **The walls in the kitchen are in need of cleaning. **General cleaning and organizing is needed... too much clutter. **Cleaning is needed in the area around the flat grill.
53 There is an unsealed gap around the plumbing line from the grease trap.
